Instructions
Step 1: Preparing the Chicken
Dice the chicken to about 1cm thick and 3-4cm long
Coat the chicken with the Mexican spice blend and lemon juice
Let the chicken marinate for a few minutes
Step 2: Dicing the Vegetables
Use a food processor to dice the onions and capsicums
Add the diced vegetables to a pan with coconut oil and garlic
Cook until the vegetables are translucent
Step 3: Cooking the Chicken
Cook the marinated chicken in a pan with coconut oil
Add the cooked chicken back to the pan with the cooked vegetables
Mix in the refried beans to create a flavorful filling for the enchiladas
Step 4: Assembling the Enchiladas

Hello, it’s Mindy here from Wheel in the World. Today we’re going to be doing an enchilada recipe with chicken. I’m really excited to share this with you because it’s one of the recipes that my family loves to eat.
Gluten-Free Enchiladas
This recipe is gluten-free because we’ll be using some gluten-free tortillas. You can do it with gluten tortillas if you want to. But in the interest of this channel, we make a lot of gluten-free cooking because I’m a naturopath and I have celiac disease, as well as some celiac children.
Preparing the Chicken
First, we start by prepping the chicken. The chicken has been diced to about 1 centimeter thick and 3 to 4 centimeters long. For this recipe, we’re using 750 grams of chicken, but I’m doubling that today for batch cooking.
Wash the chicken and add the Mexican spice blend
The spice blend includes cumin, oregano, paprika, coriander seed, salt, and garlic salt
Add half the juice of a lemon and mix it all through the chicken
Dicing the Vegetables
Using a food processor, dice the onions and capsicums. For each 750 grams of chicken, we’re using 2 onions and 2 capsicums. The food processor makes this step quick and easy, chopping the vegetables in just a few seconds.
Cooking the Enchilada Sauce
In a separate cook expert stainless steel bowl, cook the enchilada sauce using tomato puree, oil, and flour. The sauce is flavored with the Mexican spice blend and garlic clove, then cooked for 5 minutes.
Cooking the Chicken and Vegetable Mixture
Cook the chicken in a cast-iron pan with coconut oil, adding the diced onions and capsicums. Once the chicken is cooked, add refried beans to the mixture for added flavor and thickness.
